  • 1/2 head cauliflower, grated

-4 eggs

-1/4 cup shredded cheddar cheese

-1 green onion, thinly sliced

-Salt and pepper, to taste

Instructions:

  1. Preheat a large pan over medium heat. Spray with cooking spray.
  2. In a mixing bowl, combine the eggs, cauliflower, cheese and green onion. Season with salt and pepper, to taste. Pour the mixture into the prepared pan. Cook for 3-5 minutes or until the bottom of the omelette is set and the top is beginning to cook. Carefully flip the omelette and cook for an additional 2-3 minutes or until cooked through. Serve immediately or store in an airtight container in the fridge for later. Enjoy!

Ingredients:

-1 head of cauliflower, cut into florets -2 eggs, beaten -1 tablespoon almond milk -2 green onions, thinly sliced -Dash of sea salt -Freshly ground black pepper -1 tablespoon olive oil or butter

Instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Bring a pot of water to a boil, then blanch the cauliflower florets for 2 minutes. Drain and run under cold water to cool.
  3. In a large bowl, mix together the eggs, almond milk, green onions, salt and pepper.
  4. Grease an 8×8 inch baking dish with olive oil or butter. Add the cauliflower and pour the egg mixture over top.
  5. Bake for 25 minutes, or until golden brown and firm to the touch. Serve warm or cold.
