-1 head of cauliflower, chopped into florets -4 eggs -1/4 cup of grated cheese (any variety will do) -1 tablespoon of olive oil or butter -Salt and pepper, to taste

  3. Add the cauliflower florets, cheese and salt and pepper to taste. Mix well until everything is combined.

  5. Transfer the omelette to an oven-safe dish and bake in the preheated oven for 5-10 minutes until golden brown on top. Serve immediately with some fresh fruit or toast on the side.
